Bacillus cereus is a Gram-positive spore-forming bacterium widely present in the natural environment. The emetic and enterotoxins it produces can easily cause foodborne diseases
posing a serious threat to food safety. This article starts from the biological characteristics of Bacillus cereus
analyzes its contamination status in various foods
explores its pathogenic mechanism and influencing factors
and proposes targeted prevention and control strategies
aiming to provide theoretical references for reducing the contamination risk of Bacillus cereus in food and ensuring public food safety.
